Easy Quiche Recipe: Kim Sutton
This quiche does not have pastry and is quick, easy and versatile, it can be easily adapted with any vegetables you have left over. I use a strong cheese and if I’m making a veggie quiche I use mushrooms, peppers and garnish with tomatoes but really it is tasty either way.
Ingredients:
6 eggs
300mg cottage cheese (any, plain, chive or pineapple)
Bacon chopped - use whatever you have, a slice or a pack
Grated cheese (the stronger the better, I use left over blue or cheddar or whatever is in the fridge)
Method:
Break the eggs in a bowl
Mix with cottage cheese
Add bacon ( and/or veg )
Add grated cheese
Mix all together and put in a greased quiche dish
Bake 200 degrees for 30 minutes or until set
Enjoy hot or cold and it keeps for a couple of days at least
