Recipe - Magic Mushrooms: Nicky Cornock

This recipe can be adapted to serve as many people as necessary.

Ingredients for Each Serving

1 large Portobello mushroom, peeled if necessary and stalk removed

2 teaspoons of red pesto

Small (1 inch/2.5cm) piece of cheese, blue is best or use vegetarian or vegan

Method

  • Place each mushroom on a square of foil.

  • Put the pesto in the centre of the mushroom and then put the cheese on top of the pesto.

  • Fold the foil around the mushroom to form a parcel.

  • Either cook the parcels on a barbecue for about 15 - 20 minutes or in the oven at 180°C/gas mark 4 for 15-20 minutes.

  • These can be served as a starter, a vegetarian or vegan main course or a vegetable side dish.
